The nose wafted pulses of blood orange, plum trifle and dried fruits; also dunnage warehouses and sweet wine in a wooden cradle. The palate was like a flash flood in the desert – mouth-flooding to start, arid on the finish – as in sweet white wine, orange peel, pressed dried dates and sweetmeats in a Bedouin tent – followed by pink peppercorns, and dried cranberries. With water, the nose developed bramble jam and Black Forest gateau and the palate found Anton Berg plum and marzipan dark chocolates. After 14 years in a first-fill bourbon barrel we transferred this to a first-fill ex-red wine hogshead.
