Imagine sitting on a sand dune of a grassy beach overlooking the sea with the mind drifting; from salted caramel swirl meringues over warm whole wheat walnut bread to a Red Snapper cocktail using celery bitters. We then had beef jerky in a teriyaki marinade, soy and Worcestershire sauce, brown sugar, pineapple and garlic, giving it an intense salty-sweet-umami flavour. With a drop of water the wind got up and the sound of crashing waves and the salty sea air mixed with the aroma of the gorse in full bloom while we enjoyed Mediterranean stuffed peppers with couscous, cumin, cinnamon and fresh ginger.
